Spicy Chicken Liver Simmer

Ingredients

Chicken liver 200g
Milk as needed(optional)
Lemongrass 1 stalk
Ginger a little
Garlic 2 cloves
Curry leaves a few
Fresh red chili a little
Palm sugar (Gula Melaka) 2 tbsp
Soy sauce (Sashimi soy) 4 tbsp
Water a little

Instructions

  1. Rinse chicken liver and soak in milk for about 30 minutes (optional).
  2. Add all ingredients into a pan.
  3. Simmer over medium heat until the liquid reduces and thickens.

  • Palm sugar creates deep sweetness and richness.
  • Soy sauce builds a strong UMAMI base.

  • Soak the liver in milk for about 30 minutes to reduce odor.
