Vegan potato salad

Ingredients

2servings
Potatoes (medium) 4-5 pieces (about 500g)
Vegan mayonnaise 1/2 cup (about 120g)
Salt 1/2 teaspoon
Pepper A pinch
Cucumber 1, thinly sliced
Carrot 1, julienned or grated
Onion (optional) 1/4, finely chopped
Finely chopped parsley or dill   (optional)

Instructions

  1. Boil the potatoes until they become soft, then mash them.
  2. Add the vegan mayonnaise, lemon juice, salt, and pepper to the mashed potatoes and mix well.
  3. Add the cucumber and carrot, and stir everything together.
  4. Chill in the refrigerator for a while, then serve.
