Vegan potato salad

Ingredients
2servingsPotatoes (medium) | 4-5 pieces (about 500g) |
Vegan mayonnaise | 1/2 cup (about 120g) |
Salt | 1/2 teaspoon |
Pepper | A pinch |
Cucumber | 1, thinly sliced |
Carrot | 1, julienned or grated |
Onion (optional) | 1/4, finely chopped |
Finely chopped parsley or dill | (optional) |
Instructions
- Boil the potatoes until they become soft, then mash them.
- Add the vegan mayonnaise, lemon juice, salt, and pepper to the mashed potatoes and mix well.
- Add the cucumber and carrot, and stir everything together.
- Chill in the refrigerator for a while, then serve.
