Vegan Tonkotsu-style Ramen

1/2 cup chopped green onions (negi) |
2 tbsp pickled ginger (beni-shoga) |
1/4 cup rehydrated wood ear mushrooms (kikurage), sliced |
1 tbsp toasted white sesame seeds |
Instructions
- Heat the vegan tonkotsu broth in a pot according to package instructions.
- Cook the ramen noodles as per package instructions, then drain and rinse.
- Prepare the toppings: slice the mushrooms, chop the green onions, and toast the sesame seeds.
- Place noodles in bowls, pour broth over, and top with mushrooms, green onions, ginger, and sesame seeds.
- Serve and enjoy!
