Vegan Tonkotsu-style Ramen

Soup Paste1:Soy milk2:Oat Milk3:Water2
2 servings ramen noodles
1/2 cup chopped green onions (negi)
2 tbsp pickled ginger (beni-shoga)
1/4 cup rehydrated wood ear mushrooms (kikurage), sliced
1 tbsp toasted white sesame seeds

Instructions

  1. Heat the vegan tonkotsu broth in a pot according to package instructions.
  2. Cook the ramen noodles as per package instructions, then drain and rinse.
  3. Prepare the toppings: slice the mushrooms, chop the green onions, and toast the sesame seeds.
  4. Place noodles in bowls, pour broth over, and top with mushrooms, green onions, ginger, and sesame seeds.
  5. Serve and enjoy!
