- Rakkyo Vinegar

- Chop the cucumbers, carrots, and bell peppers into chunks. Remove the strings from the celery and cut into 1.5 cm widths.
- Put the ingredients from (1) into a container (or plastic bag), and add the bay leaves, red chili peppers, and the pickling vinegar to marinade. Store in the refrigerator.
